Great grandmother's recipe

Hello!
It has been a long summer, and I have been using an awesome recipe which actually belongs to my great grand mother. It makes a great cake, and can be turned into different things.

3dl sugar
4 eggs
2.25 dl flour
It's really simple. Mix the sugar and eggs in a electronic mixer for AT LEAST 5 min. The longer the better, believe me. I was doing this by hand, it took over 30 min. It should be white, and not liquid, mor like a mousse.
Then add in the flour, while mixing it.
Oven, 175 degrees Celcius, for about 45 minutes. And its done.

I have made frosting when I want to make a real cake-cake. I have just googled recipes, once I had whote chocolate frosting, and another time raspberry butterfrosting. Just find one you like and then put some fresh fruit on it to make it look good.

You can't fail with this cake!

Making a birthday cake

This weekend it was my boyfriends b-day. I asked him to name one ingredient for a cake. He said peaches.

This is what I came up with :)
Cake:
2  coffe cups (small, think espresso size) sugar
4 eggs
1,5  coffe cups (small, think espresso size) flour
Use an mixer to mis the suger and eggs for at least 3min. The longer the better. 
Then add the flour, while mixing t on a slow speed.
Put in the oven for 1h-1,25h 175degrees celsuis

When the cake was cooling down i made white chocolate frosting.
Ingredients You Will Need:
8 ounces white chocolate, chopped fine
12 ounces cream cheese, softened
½ cup unsalted butter
1 cup powdered sugar
2 teaspoons vanilla extract
¾ teaspoon fresh lemon
Melt the chocolate in a double boiler. Do not boil the water, but keep a steady heat going until the chocolate melts. To prevent scorching or accidentally drying out the chocolate, watch the mixture carefully and stir often until smooth. Set the melted chocolate aside.

Using an electric mixer, beat the cream cheese and butter until fluffy. Add the vanilla and lemon. Beat in the white chocolate very slowly, one teaspoon at a time.

As soon as the chocolate has been added, begin adding the powdered sugar, one heaping tablespoon at a time.

Cool the frosting before applying.

In the end I cut the cake in two layers and put a lot of raspberry jam in between, then I put on the top layer and covered the cake with frosting. The frosting should have the same texture as cream cheese (could be a bit thinner) this makes it way easier to apply it on the cake.

Then I put peaches on top to make the cake look nice.

Guacamole

My boyfriend loves guacamole, and I really like it too. So for a friday evening, this is the perfect snack. And it is not that unhealthy ;)

2 large and ripe avocados
2 tomatoes
1 red onion
1 lime
A few drops of tabasco
Sour cream, if you want. This is however not needed if you have enough avocado.

1. Start to heat water, you will biol the tomatoes until the peel is cracking, and then you can peel them.
2.Peel and mash the avocados. This is very easily done with a potato masher, actually.
3. Peel the tomatoes, chop them and finally take away all the seeds and juice in them.
4. Chop the onion into small pieces.
5. Mix the onion and tomatoes into the avocado and mix it.
6. Add Tabasco, salt and pepper after your own taste :) (add sour cream if you need to)

Serve with salted nachos!

I hope you like it, I just took what I had at home, but was very pleased with the result.

Subway's cookies part II - the making

This morning I tried the recipe of cookies that, which was said to tast like Subway's cookies. I hvae tried a few different recipes for cookies before, and i liked this a lot actually. If they are comparable with Subway's can be argued. I don't think so, but they are the closest ones yet. 


Here's the recipe: 
2 cups/5 dl flour
1/2 teaspoon baking soda
1/2 teaspoon salt
150 g butter
1 cup/2 1/2 dl brown sugar
1/2 cup/1 1/4 dl sugar
1 teaspoon vanilla sugar
1 egg
1 egg yolk
200g chopped chocolate (I mixed white chocolate with milk chocolate, but you cab decide yourslef what kind you want) 

This recipe makes 15 cookies
 
1. Turn on the oven, 175 degrees C.
2.Mix flour, baking soda and salt in a bowl.   
3.Mix melted butter, brown sugar and sugar in another bowl. add the vanilla suger, the egg and the egg yolk and mix together.
4. Add the flour mixture and stirr, but not for too long. You might not need all the flour, so be a bit carefull. I found it the easiest to use my hands in the end.
5. Add the chocolate and massage it in.


6. Put the dough in small bolls on a baking sheet, its enough to put 6 on each, they will grow!
7. Put them in the oven for 15 minutes, or until they get some colour. When you take them out let them cool a bit before moving them from the baking sheet.

Subway's cookies part I - the search

Have you tasted Subway's cookies? I have. And I'm hooked. They are perfect, irresistable, chocolaty, chewy - all in one! What I would almost kill for having right now is the recipe... This however is not that easy to find. After some googling I found out that there's more people like me out there, a relief. I also got some tips for different comparable recipes. The result will come during the upcoming weekend!
